Ingredients

  • 2 chicken breasts boneless and skinless
  • 200 g pasta of choice
  • 150 g pesto sauce
  • 100 g grated parmesan cheese
  • 150 g cherry tomatoes halved

Instructions

  • Cook the pasta according to package instructions, saving a cup of pasta water, then drain.
  • While the pasta is cooking, season the chicken breasts with salt and pepper. In a pan over medium-high heat, sear the chicken breasts until fully cooked, around 7 minutes each side.
  • Slice the cooked chicken into thin strips.
  • In a large bowl, mix the pasta, sliced chicken, pesto sauce, and half of the parmesan cheese. If the sauce is too thick, add a bit of the saved pasta water.
