Ingredients

  • 500 g of gnocchi
  • 200 g of bacon diced
  • 2 large eggs
  • 1 cup of freshly grated Parmesan cheese
  • 2 cloves of garlic minced

Instructions

  • Cook the gnocchi according to the package instructions. Once cooked, drain and set aside.
  • In a large pan, cook the bacon until crispy. Add the garlic and cook for another minute until fragrant.
  • In a separate bowl, whisk together the eggs and Parmesan cheese.
  • Remove the pan from the heat. Add the cooked gnocchi to the pan and quickly toss to combine with the bacon and garlic.
  • Slowly pour the egg and Parmesan mixture into the pan, continually tossing the gnocchi to create a creamy sauce. The heat from the gnocchi and bacon will gently cook the eggs. 6. Continue to toss until the sauce thickens. If it's too thick, you can add a little bit of the pasta water to thin it out.
