Ingredients

  • 1 and ½ cups graham cracker crumbs
  • ¼ cup granulated sugar for the crust
  • ½ cup unsalted butter melted
  • 3 8-ounce packages cream cheese, room temperature
  • 1 cup granulated sugar for the filling
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • Optional toppings: fruit chocolate, caramel, etc.

Instructions

  • Preheat your oven to 325°F (163°C). In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until the crumbs are evenly moistened. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then remove from the oven and cool.
  • In a large bowl, use an electric mixer to beat the cream cheese, sugar, and vanilla extract until smooth and fluffy. Add eggs one at a time, mixing low just until blended. Pour over the prepared crust.
