Instructions
In a large bowl, whisk together olive oil, garlic, lemon juice, oregano, salt, and pepper.
Add lamb cubes and marinate for at least 2 hours or overnight in the refrigerator.
Preheat grill or grill pan to medium-high heat.
Thread marinated lamb onto skewers, discarding excess marinade.
Grill skewers for 10-12 minutes, turning occasionally, until desired doneness.
Rest skewers for a few minutes before serving.
