Instructions
Sift gram flour and all-purpose flour together in a large bowl.
In a heavy-bottomed pan, melt ghee and add the flour mixture, cooking on low heat until it turns golden brown.
In a separate pan, prepare a sugar syrup by heating sugar and ¼ cup water until it reaches a one-string consistency. Add cardamom powder.
Pour the sugar syrup into the flour mixture, stirring continuously until well combined.
Transfer the mixture onto a greased plate and let it cool slightly.
When cool enough to handle, pull and fold the mixture repeatedly until it becomes light and flaky.
Press the mixture into a greased tray and let it set.
Cut into squares or diamond shapes and serve.
Notes
Sift flours together for a smoother mixture.
Use a heavy-bottomed pan to prevent burning.
Stir the sugar syrup constantly to achieve the right consistency.
Allow the mixture to cool slightly before pulling and folding.
Store in an airtight container to maintain freshness and texture.
