Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
Open up each date slightly and stuff with a small amount of goat cheese and an almond.
Wrap a piece of bacon around each stuffed date and secure it with a soaked toothpick.
Place the bacon-wrapped dates on the prepared baking sheet.
Bake in the preheated oven for 20 minutes or until the bacon is crispy and golden.
Let them cool for a few minutes, then drizzle with honey before serving.
Notes
Soak toothpicks in water before using to prevent them from burning in the oven.
• Cut bacon strips in half or thirds to wrap around the dates easily without overlapping too much.
• Stuff dates lightly with cheese to avoid oozing out during baking.
• Bake until the bacon is crispy for the best texture contrast.
• Let the dates cool for a few minutes after baking for easier handling.
