Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a large bowl, mix the flour, salt, and cayenne pepper. Add the butter and cheese, and use a pastry cutter or your fingers to combine until the mixture resembles coarse crumbs. If the dough is too dry, add a tablespoon of cold water to help it come together.
Turn the dough out onto a lightly floured surface and knead it gently until it forms a ball.
Roll the dough out into a rectangle about ½ inch thick. Cut into strips about ½ inch wide and 5 inches long.
Place the strips on the prepared baking sheet, leaving a bit of space between each straw.
Bake for 15 minutes, or until the straws are golden brown and crispy.
Let them cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
