Instructions
Combine the pineapple, sugar, lemon juice, water, and ginger (if using) in a large, heavy-bottomed saucepan.
Bring the mixture to a boil over medium heat, then reduce the heat to low. Simmer, stirring frequently, until the mixture thickens and reaches a jam-like consistency, about 30 minutes.
To test for doneness, place a small amount of jam on a cold plate. If it gels, it's ready.
Remove from heat and let cool slightly. If desired, use an immersion blender for a smoother texture.
Pour the hot jam into sterilized jars, leaving a small space at the top. Seal the jars while hot and let cool to room temperature. Store in the refrigerator.
