In a large bowl, mix flour and salt. Gradually add water, kneading into a soft dough.
Add oil to the dough and knead again until smooth.
Cover and let it rest for 30 minutes.
Divide the dough into equal portions and roll each into a smooth ball.
On a floured surface, roll each ball into a thin, flat circle.
Heat a pan on medium heat and place the rolled-out roti on it.
Cook until small bubbles form, then flip. Cook the other side for a few seconds.
Remove from the pan and brush lightly with ghee.
