Preheat your griddle or pan over medium-high heat.
Divide the beef into 4 equal portions. Roll into balls and season with salt and pepper.
Place a ball of beef on the griddle. Smash it flat with a spatula to about ¼ inch thickness.
Cook for 2-3 minutes until the edges are crispy. Flip and immediately place a slice of cheese on top.
Cook for another 1-2 minutes. Remove from the griddle.
Butter the buns and toast them on the griddle until golden brown.
Assemble the burgers with lettuce, tomato, onion, and your choice of condiments.
