Instructions
Preheat your oven to 400°F (200°C). Prepare a large baking sheet by lightly oiling or lining with parchment paper.
Place the cubed potatoes, sliced onions, and bell peppers on the baking sheet. Drizzle with olive oil, then season with salt, pepper, and any optional herbs. Toss everything to coat well.
Arrange the chicken sausages among the vegetables on the baking sheet. Prick the sausages with a fork.
Place the baking sheet in the preheated oven and roast for about 25-30 minutes, until the sausages are browned and cooked through and the vegetables are tender. Rotate the sausages occasionally for even browning.
