Instructions
Blend the strawberries until you have a smooth puree.
In a saucepan, combine the strawberry puree, sugar, lemon juice, and vanilla extract. Cook over medium heat, stirring often.
In a small bowl, sprinkle gelatin over cold water and let it sit for 5 minutes. If using agar agar, follow the packet instructions.
Add the gelatin or agar agar mixture to the saucepan and stir until dissolved.
Pour the mixture onto a lined baking tray and spread evenly.
Dry in an oven at its lowest setting for 6-8 hours or until it's not sticky to touch.
Once done, let it cool, then peel it off the liner. Roll, cut, and store in an airtight container.

Always use ripe and fresh strawberries for the most flavorful result.
Spread the strawberry mixture uniformly on the baking tray to ensure even cooking.
