Instructions
Press tofu to remove excess water.
In a bowl, mix soy sauce and minced garlic. Add tofu cubes and marinate for 30 minutes.
Heat olive oil in a non-stick pan over medium heat.
Add the marinated tofu. Cook for 5-7 minutes, stirring occasionally.
Add vegetables to the pan. Cook until soft, about 5-7 minutes.
Taste and adjust seasonings if needed.
Serve hot.
