Beef Quesadillas

small tortillas

cups
cooked beef
shredded or chopped
1½-2
cups
shredded cheese
1- 2
bell peppers
sliced
Cooking oil for frying
Instructions
Heat a small amount of oil in a non-stick pan over medium heat.
Place one tortilla in the pan.
Sprinkle a layer of cheese over half the tortilla.
Add some beef and bell pepper slices on top of the cheese.
Fold the tortilla in half over the fillings.
Cook for about 2-3 minutes on each side until golden brown.
Remove from pan, let it cool for a minute, then cut into wedges.
Repeat with the remaining ingredients.
Notes
Use a non-stick pan for easier flipping.
Warm the tortillas a little before assembling to make them more pliable.
Don’t overstuff the quesadilla; it will make flipping difficult.
Cook on medium heat to allow the cheese to melt without burning the tortilla.
Experiment with added fillings like jalapenos, black beans, or corn.
