pound
beef
cut into cubes
2
medium sweet potatoes
peeled and diced
2
large carrots
sliced
1
large onion
diced
4
cups
beef broth
Salt and pepper to taste
Optional: Fresh herbs like rosemary or thyme
Instructions
Brown the beef cubes in a pot with a little oil. Remove and set aside.
In the same pot, sauté the onions until soft.
Add the carrots and sweet potatoes to the pot.
Put the beef back in.
Pour in the beef broth.
Add salt, pepper, and optional herbs.
Cover and simmer for about 1 hour or until beef and veggies are tender.
Taste and adjust seasoning if needed.
Serve hot.
Notes
Use a slow cooker if you have one. It makes the beef super tender.
Cut your veggies into similar sizes for even cooking.
Season the beef with salt and pepper before browning. It brings out the flavor.
Use fresh herbs like rosemary or thyme to add extra taste.
If the stew is too thick, add more broth. If too thin, let it simmer longer.
