lemongrass stalks

A thumb-sized piece ginger

Instructions
In a pot, bring 2 cups of water to a boil. Add lemongrass, ginger, and chili.
Let it simmer for 10 minutes to infuse the flavors.
Add the chicken slices and cook until they're fully cooked.
Pour in the coconut milk and let the soup simmer for another 10 minutes. Stir occasionally.
Season with salt and pepper according to taste. You can also add some lime juice for added zing.
Serve hot and enjoy!

Always use full-fat coconut milk for a richer and creamier soup.
Adjust the level of chili according to your spice preference.
Boneless chicken makes for easier eating, but bone-in pieces can add more flavor.
For a clearer broth, strain the soup before adding the chicken.
