Peruvian Chicken

Instructions
In a bowl, mix together the minced garlic, cumin, paprika, lime juice, olive oil, salt, and pepper.
Rub the chicken thoroughly, inside and out, with the marinade.
Let the chicken marinate for at least 2 hours, preferably overnight, in the refrigerator.
Preheat your oven to 425°F (220°C).
Place the chicken in a roasting pan, breast side up.
Roast for about 60-75 minutes, or until the internal temperature reaches 165°F (74°C). Remember to baste every 20 minutes.
Once done, remove from the oven and let rest for 10 minutes before serving.
Notes
Marinate the chicken for at least 2 hours or overnight for the best flavor infusion.
Ensure your oven is properly preheated before placing the chicken in.
Trussing the chicken (tying its legs together) helps in even cooking.
Baste the chicken every 20 minutes to keep it juicy and flavorful.
Let the chicken rest for at least 10 minutes after roasting to retain its juices.
