Ingredients
2
chicken breasts
1
fresh pineapple
cut into chunks
2
bell peppers
sliced
¼
cup
soy sauce
2
tablespoons
brown sugar
Instructions
Cut the chicken into bite-sized pieces and marinate them in a mixture of soy sauce and brown sugar for at least 30 minutes.
Heat a pan and add a bit of oil. Sauté the chicken until it's cooked through and set it aside.
In the same pan, add a little more oil and sauté the bell peppers until they're slightly softened.
Add the pineapple chunks to the pan and cook until they're heated through.
Return the chicken to the pan, mix everything together, and let it simmer for a few minutes so the flavors meld together.
Notes
Marinating the chicken for at least 30 minutes helps it absorb the flavors better.
Always use fresh ingredients whenever possible for the best flavors.
Don't overcook the bell peppers; they should retain their crunch.
Taste the sauce before adding it to the stir-fry to ensure it's balanced. Adjust with more soy sauce or sugar as needed.
If using canned pineapple, save the juice to use in the sauce for extra flavor.
