Instructions
Brown the chicken in a large pot, then remove and set aside.
In the same pot, sauté the onions and garlic until soft and fragrant.
Add the vegetables and cook for a few more minutes.
Return the chicken to the pot, add the herbs, and pour in the chicken stock.
Bring to a boil, then reduce heat and simmer for about 1 hour, or until the chicken is tender and the stew has thickened.
