Instructions
Preheat your oven to 350 degrees F (175 degrees C).
In a large bowl, whisk the eggs until well beaten. Stir in the chopped spinach.
Heat a 10-inch oven-safe skillet over medium heat. Add the sliced red onion and cook until softened.
Spread the smoked salmon and cream cheese evenly over the cooked onion.
Pour the egg and spinach mixture over the salmon and cream cheese. Cook for 2-3 minutes until the edges start to set.
Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set in the middle.
Let the frittata rest for 5 minutes before slicing and serving.
