Ingredients
2
cups
fresh strawberries
1
cup
walnuts
6
cups
baby spinach
½
cup
crumbled feta cheese
½
cup
balsamic vinaigrette
Instructions
Wash and dry the spinach and strawberries.
Cut strawberries into halves or quarters.
Toast the walnuts in a pan over medium heat, stirring frequently until they're golden brown.
Toss the spinach, strawberries, and toasted walnuts in a large bowl.
Sprinkle the crumbled feta cheese on top.
Just before serving, drizzle the salad with the balsamic vinaigrette and toss again to combine.
Notes
Be sure to wash and dry your spinach and strawberries well. Any excess water can make the salad soggy.
Toasting the walnuts can bring out their flavor. Just place them in a dry pan over medium heat for a few minutes, stirring frequently.
If making the salad ahead of time, store the dressing separately and add just before serving to prevent the spinach from wilting.
Adjust the quantity of each ingredient to suit your personal preferences.
Don't cut the strawberries until you're ready to serve the salad. They can lose their freshness if cut too far in advance.
