firm tofu
pressed and cubed

bunch scallions

Instructions
In a large pot, combine tofu, mushrooms, scallions, and vegetable broth.
Bring to a boil, then reduce heat and let simmer for 20 minutes.
Stir in chili paste and cook for an additional 5 minutes.
Taste and adjust seasoning if necessary. Serve hot.
Notes
Press tofu for at least 30 minutes to remove excess water and improve texture.
Clean mushrooms with a damp cloth instead of soaking to avoid waterlogging.
