Instructions
In a Dutch oven or large pot, brown the oxtail pieces on all sides. Remove and set aside.
Add the onion and carrots to the pot, cooking until softened.
Stir in the red wine and tomato paste, and bring to a simmer.
Return the oxtail to the pot, cover, and cook on low heat for 3-4 hours or until the meat is tender.
Adjust seasonings and serve as desired.
