Instructions
Preheat oven to 350°F (175°C).
Cut off the tops of the bell peppers and remove the seeds and membranes.
In a large skillet, cook the sausage and onion until the sausage is browned.
Stir in the cooked rice and half of the cheese.
Stuff the bell peppers with the sausage mixture and place them in a baking dish.
Top with the remaining cheese.
Bake for 30-35 minutes or until the peppers are tender and the cheese is melted.
Notes
Remove seeds and membranes from the bell peppers to reduce spiciness.
Precook the sausage to ensure even cooking throughout.
Drain any excess grease from the sausage before combining with other ingredients.
Parboil the bell peppers to soften them slightly before stuffing.
Use a spoon or ice cream scoop to stuff the bell peppers evenly.
