olive oil

onion

garlic

celery

carrots

chicken broth

potato gnocchi

cup
milk

spinach

Instructions
Add 1 tablespoon of olive oil into the Instant Pot and press "saute".
Once heated, add ½ of a chopped onion and garlic and stir we bit.
Add 1 stalk of chopped celery and ½ cup of sliced carrots.
Pour in 1 cup of chicken broth and the chicken.
Add salt, pepper and thyme and stir well.
Add potato gnocchi, milk and spinach and stir well.
Close the lid and cook on high pressure for 5 minutes.
When cooking time is complete, do a quick pressure release.
Serve and enjoy :)

Notes
For the best texture, try and cut the chicken into the same size pieces as the gnocchi.
you can never go wrong with adding in other vegetables. Mushrooms would be a great addition, as would the superfood kale!
If you want to add a hint of sweetness, using a little bit of coconut milk is a great option.
