Ingredients
12
lasagna noodles
cooked al dente
4
cups
mashed potatoes
8
ounces
cream cheese
softened
1
large onion
thinly sliced and sautéed
2
cups
shredded cheddar cheese
Instructions
Preheat oven to 350°F (175°C).
In a large bowl, mix mashed potatoes and cream cheese until smooth.
Spread a thin layer of the potato mixture on the bottom of a 9x13-inch baking dish.
Layer 4 lasagna noodles on top of the potato mixture, followed by half of the remaining potato mixture.
Repeat with another layer of noodles and the rest of the potato mixture.
Top with the final layer of noodles, the sautéed onions, and shredded cheddar cheese.
Cover with foil and bake for 30 minutes.
Remove foil and bake for an additional 10-15 minutes, or until cheese is melted and bubbly.
Notes
Cook the noodles al dente to prevent them from becoming too soft in the casserole.
Season the mashed potatoes well to enhance the overall flavor of the dish.
Make sure the cream cheese is softened before mixing it with the potatoes for a smoother filling.
Pre-cook the onions until caramelized for a sweeter, more developed flavor.
Cover the casserole with foil during baking to prevent over-browning, then uncover for the last few minutes for a golden top.
