peeled and shredded

small red bell pepper
seeded and chopped

onion

garlic cloves

coconut oil
to taste
Salt and freshly ground black pepper
Instructions
Pour the oil in the Instant Pot and select “Sauté”.
Add onion, bell pepper and garlic and sauté for about 2 minutes.
Add all ingredients to Instant Pot and secure the lid and cook under “Manual” and
“High Pressure” for about 28 minutes.
Select “Cancel” and carefully do a quick release.
Uncover the lid and serve hot.
