Instructions
Preheat oven to 350°F (175°C).
In a large skillet, cook ground beef over medium heat until browned. Drain the fat and add taco seasoning, following package instructions.
Spread half of the crushed tortilla chips in the bottom of a 9x13 inch baking dish.
Layer the cooked beef, black beans, corn, and salsa over the chips.
Sprinkle with half the cheese, add the rest of the tortilla chips, then top with the remaining cheese and olives if using.
Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
Garnish with green onions, and serve with optional toppings like sour cream, lettuce, tomatoes, and jalapeños.
Notes
Drain the ground beef well after cooking to keep the casserole from becoming too greasy.
• Crush the tortilla chips lightly; don’t turn them into fine crumbs to maintain texture.
• Add some fresh cilantro or green onions on top before serving for extra freshness and color.
