In a bowl, combine chicken pieces with soy sauce, hoisin sauce, and Chinese five-spice powder. Let sit for 15 minutes.
Prepare Ingredients: While the chicken marinates, prepare your vegetables and set aside.
Heat vegetable oil in a wok or large pan over high heat. Add chicken and stir-fry until browned and nearly cooked through. Remove chicken and set aside.
In the same pan, add a bit more oil if needed. Stir-fry the bell pepper, garlic, ginger, and Sichuan peppercorns for a few minutes until fragrant.
Return the chicken to the pan. Add peanuts and stir well. Pour in the cornstarch mixture to thicken the sauce.
Cook everything together for another 2-3 minutes. Adjust seasoning with salt if needed. Sprinkle with green onions before serving.
Notes
Marinate chicken for at least 15 minutes for extra flavor.
• Use a high heat for cooking to get a good sear on the chicken.
• Adjust the amount of Sichuan pepper to control the level of numbness.
• Prep all ingredients before cooking, as the process is fast.
• Stir-fry vegetables briefly to retain their crunch.
