Heat olive oil in a pan over medium-high heat. Cook the marinated chicken for about 5 minutes on each side, or until fully cooked. Remove from heat and let it rest before slicing.
Lightly toast the sourdough bread slices.
Assemble the sandwiches by placing sliced chicken on a slice of bread, followed by avocado slices, and 2 slices of Monterey Jack cheese on each.
Place the sandwiches on a baking sheet and broil in the oven until the cheese is melted and bubbly, about 3-5 minutes.
Garnish with cilantro and serve with lime wedges on the side, if desired.
Notes
Pound the chicken breast to even thickness for uniform cooking.
Marinate the chicken in chipotle and adobo sauce for at least an hour for more flavor.
Grill the chicken instead of pan-frying for an added smoky taste.
Toast the bread lightly before assembling to prevent it from getting soggy.
Layer the avocado under the cheese to help keep it in place when melting.
