Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, mix the sliced peaches, 2 tablespoons of honey, lemon juice, and vanilla extract. Spread this mixture into an 8-inch baking dish.
In another bowl, combine the oats, almond flour, melted coconut oil (or butter), ¼ cup of honey, cinnamon, and a pinch of salt. Mix until crumbly.
Sprinkle the oat mixture evenly over the peach mixture in the baking dish.
Bake in the preheated oven for about 35 minutes, or until the topping is golden brown and the peach filling is bubbling.
Let it cool for at least 10 minutes before serving.
Notes
If using canned peaches, make sure to drain them well to avoid a soggy crisp.
To make the topping extra crispy, broil the crisp for the last 2-3 minutes of baking.
Allow the peach crisp to cool for at least 10 minutes before serving to let the juices thicken.
For a deeper flavor, you can add a pinch of salt to the topping mixture.
You can mix in other fruits like berries or apples with the peaches for a different twist.
