Prepare Chicken: Season chicken breasts with salt and pepper. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove from skillet, let cool slightly, and then slice or shred.
Cook Zucchini Noodles: In the same skillet, add the remaining tablespoon of olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add spiralized zucchini noodles and cook for about 2-3 minutes, until just tender. Avoid overcooking to prevent them from becoming soggy.
Combine and Serve: Return the chicken to the skillet with the zucchini noodles. Toss to combine and heat through. Season with additional salt and pepper if needed. Serve hot, sprinkled with grated Parmesan cheese and optional garnishes like fresh basil, lemon wedges, or red pepper flakes.

• Use a spiralizer for the zucchini to get even, noodle-like strands.
• Pat the chicken dry before cooking for a better sear.
