Lay the chicken thighs flat and season both sides with salt and pepper.
In a bowl, combine the spinach, feta cheese, sun-dried tomatoes, and garlic.
Divide the mixture among the chicken thighs, placing it in the center of each thigh.
Roll up the thighs around the filling and secure with toothpicks.
Heat olive oil in a large oven-proof skillet over medium-high heat. Sear the chicken on all sides until golden, about 2-3 minutes per side.
