drained and chopped

Optional: ½ cup chopped nuts or coconut flakes
Instructions
Preheat oven to 350°F (175°C).
In a bowl, cream together butter and sugar until light and fluffy.
Beat in the egg and vanilla extract.
In a separate bowl, whisk together flour, baking powder, and salt.
Gradually mix the dry ingredients into the creamed mixture.
Stir in the chopped pineapple (and nuts or coconut, if using).
Drop spoonfuls of dough onto a baking sheet.
Bake for 12-15 minutes or until lightly golden.
Let cool on the baking sheet for a few minutes before transferring to a wire rack.
