In a bowl, mix ground beef with salt and pepper. Form into 12 small patties.
Lightly oil the grill. Cook patties for about 3-4 minutes on each side or until desired doneness.
Place a piece of cheese on each patty in the last minute of cooking.
Toast the buns on the grill for 1-2 minutes.
Assemble sliders: bottom bun, lettuce, tomato, beef patty with cheese, onion (if using), ketchup/mustard, top bun.
