Instructions
Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
In a large bowl, cream the softened butter and sugar until light and fluffy.
Beat in the eggs, one at a time, integrating each thoroughly before adding the next.
Stir in the crushed pineapple and vanilla extract, mixing well.
Sift together the all-purpose flour, baking powder, and salt. Gradually add it to the pineapple mixture, stirring until just combined.
Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
