Instructions
In a large pot, bring the chicken stock to a boil. Add the shredded chicken, sweetcorn, and minced ginger. Simmer for 10 minutes.
Stir in the soy sauce, salt, and white pepper. Adjust seasoning according to taste.
If you prefer a thicker soup, make a slurry by mixing cornstarch with a little water and add to the soup, stirring well.
Slowly pour in the beaten eggs while stirring the soup to create egg ribbons.
Add the chopped spring onions.
Turn off the heat and let the soup sit for a couple of minutes to let the flavors meld.
Serve hot, garnished with fresh herbs.
Notes
Use a hand blender to partially blend the sweetcorn for a creamier texture without actually adding cream.
If using chicken breasts, poach them gently to keep them tender, or use pre-cooked rotisserie chicken for convenience.
Enhance the flavor by adding a dash of sesame oil or white pepper before serving.
For a thicker soup, mix a tablespoon of cornstarch with water and stir into the soup until it reaches your desired consistency.
Garnish with freshly chopped herbs like cilantro or parsley for a color contrast and a burst of freshness.
