Instructions
In a saucepan, combine maple syrup, bourbon, brown sugar, Dijon mustard, soy sauce, apple cider vinegar, minced garlic, and black pepper.
Bring the mixture to a simmer over medium heat.
Reduce heat to low and continue to simmer, stirring occasionally until the glaze is reduced by half and thickened (about 10 minutes).
Remove from heat and let it cool for a few minutes. It will thicken upon standing.
Use immediately or store in an airtight container in the refrigerator for up to a week. Warm slightly before using if refrigerated.
Notes
Always use pure, high-quality maple syrup for the best flavor rather than synthetic "maple-flavored" syrups.
Simmer the glaze on low heat to thicken; a rushed high heat can burn the sugar content quickly.
Allow the glaze to cool slightly before using; it thickens on standing and gives a better coat.
If using a substitute for bourbon, remember the flavor profile will change; choose something that complements maple.
For a spicy kick, a pinch of cayenne pepper or a dash of hot sauce can be added to the glaze.
