Chocolate Cake Layers
either homemade or store-bought

of heavy whipping cream
¼
cup
powdered sugar
1
jar of Morello cherries
or substitute

tablespoons
Kirsch
or substitute
Chocolate shavings

Instructions
If making the cake from scratch, prepare and bake according to your favorite chocolate cake recipe. Once baked, allow the layers to cool completely.
Whip the heavy cream with powdered sugar until stiff peaks form.
Drain the cherries, reserving the juice. Mix the juice with Kirsch.
Slice each cake layer in half horizontally. Brush each layer with the cherry juice and Kirsch mixture.
Spread a layer of whipped cream on top of the first cake layer, followed by a layer of cherries. Repeat for each layer.
Once assembled, frost the entire cake with the remaining whipped cream.
Garnish the top with chocolate shavings and optionally, more cherries.
Refrigerate for at least 3-4 hours before serving.
Notes
For a moist cake, brush each layer with a mix of cherry juice or Kirsch before assembling.
Ensure the whipped cream is very cold before whipping; this will help achieve stiff peaks faster.
When pitting fresh cherries, use a cherry pitter to keep them intact.
To make even and thin chocolate shavings, use a vegetable peeler and run it down the side of a bar of chocolate.
Assembling the cake a day in advance allows the flavors to meld, resulting in a richer taste.
