pasta of your choice
2
medium tomatoes
diced

ripe avocado
diced

black olives
sliced

red onions
thinly sliced

feta cheese
crumbled

lemon or lime juice
Salt and pepper to taste
Fresh herbs
basil or parsley, chopped for garnish
Instructions
Cook the pasta according to package instructions. Drain and rinse under cold water.
In a large bowl, combine tomatoes, avocado, black olives, and red onions.
In a separate bowl, whisk together olive oil, lemon or lime juice, salt, and pepper.
Add the cooled pasta to the veggies, pour over the dressing, and toss until everything is well combined.
Stir in the crumbled feta cheese and garnish with fresh herbs.
Notes
Always rinse pasta under cold water after cooking to stop the cooking process and cool it down.
To keep avocado from browning, toss it in a bit of lemon or lime juice.
Crumble the feta cheese rather than cutting it for a better mix and texture.
You can prepare the ingredients ahead, but mix them only when you're ready to serve.
Add the dressing just before serving to prevent the pasta from getting soggy.
