Slow Cooker Beef Stroganoff

Beef chunks
about 2 pounds

cup
sliced mushrooms
1
onion
chopped

cup
sour cream

cups
beef broth
Instructions
In a pan over medium heat, brown the beef chunks. Remove and place in the slow cooker.
Add mushrooms, onions, and beef broth to the slow cooker.
Cover and cook on low for 7-8 hours or until the beef is tender.
An hour before serving, stir in the sour cream and let it cook for the remaining time.
Season with salt and pepper to taste.
Notes
Brown the beef chunks first to seal in flavor before slow cooking.
To avoid curdling, add sour cream towards the end of the cooking process.
If the sauce is too thin after cooking, mix a tablespoon of cornstarch with cold water and stir into the stroganoff to thicken.
Don't overfill your slow cooker; leave some space for best results.
For added flavor, consider tossing in a bay leaf or some dried thyme.
