Instructions
Preheat the oven to 350°F (175°C) and line a cupcake tin with paper liners.
In a bowl, whisk together the flour and baking powder. Set aside.
In another bowl, cream the butter and sugar until light and fluffy.
Beat in the eggs one at a time, followed by vanilla if using.
Gradually mix in the flour mixture, alternating with the milk. Mix until just combined.
Pour the batter into the cupcake liners, filling them ⅔ full.
Bake for 18-22 minutes or until a toothpick comes out clean.
Allow cupcakes to cool completely before decorating.
Notes
Ensure all ingredients are at room temperature for even mixing.
Avoid overmixing the batter; it can make the cupcakes dense.
For even baking, rotate the cupcake tin halfway through the baking time.
Test cupcakes for doneness by inserting a toothpick. If it comes out clean, they're done.
