of fresh strawberries

cup
of Greek yogurt
2
tablespoons
of honey
or to taste
Juice of 1 lemon
A handful of mint leaves
Instructions
Wash and hull the strawberries.
In a blender, combine the strawberries, Greek yogurt, honey, lemon juice, and half of the mint leaves.
Blend until smooth.
Chill the soup in the refrigerator for at least 2 hours.
Serve garnished with the remaining mint leaves.
Notes
Choose strawberries that are bright red all over, without any white spots, for the best flavor.
Chill the soup for at least 2 hours before serving to allow flavors to meld.
If the strawberries aren't sweet enough, adjust the sweetness by adding more honey to taste.
For a richer texture, you can blend in a splash of heavy cream.
Serve the soup the same day it's made to enjoy its freshest taste.
