beef chunks

bottle
12-ounce Guinness Beer
3-4
carrots
sliced

large potatoes
chunked

large onion
chopped

cups
beef broth

cloves
garlic
minced

tablespoons
olive oil
Salt and pepper to taste
Instructions
In a large pot, heat olive oil. Add beef chunks and sear until browned. Remove and set aside.
In the same pot, sauté the chopped onions and garlic until translucent.
Add the carrots and potatoes, stirring for a couple of minutes.
Pour in the Guinness beer and beef broth.
Add the seared beef back into the pot.
Season with salt and pepper.
Cover and simmer for 2-3 hours on low heat, until beef is tender.
Serve hot and enjoy!
Notes
Searing the beef before simmering enhances flavor.
Slow cook for better taste, either in a slow cooker or low heat in a pot.
Use a thick-bottomed pot for even heat distribution.
You can add more vegetables like peas or celery for variety.
If the stew is too thin, mix a little cornstarch with cold water and add to thicken it.
