Instructions
Preheat your oven to 300°F (150°C).
Season the beef with salt, pepper, and minced garlic.
Heat a little oil in an oven-safe pot over medium-high heat. Sear the beef on all sides until browned.
Remove the beef and set aside. In the same pot, sauté the onions until they are soft.
Place the beef back into the pot on top of the onions.
Cover the pot with a lid or aluminum foil.
Put the pot in the oven and cook for 3-4 hours, or until the meat is tender.
Remove from oven and let rest for 10 minutes before slicing or shredding.
Notes
Allow the beef to come to room temperature before cooking for more even cooking.
Sear the meat on all sides for a richer flavor.
Use a slow-cooker or oven-safe pot with a lid for best results.
Don't rush; cook on low heat for several hours to get the meat tender.
You can add vegetables like carrots and potatoes during the last hour of cooking for a one-pot meal.
