corned beef

medium-sized green cabbage
cut into wedges

Instructions
Place the corned beef in a large pot and cover it with water. Add any spices that come with the beef.
Bring it to a boil, then reduce the heat and simmer for about 2.5 to 3 hours.
Add the potatoes and carrots to the pot during the last 30 minutes of cooking.
Add the cabbage and onion during the last 15 minutes.
Check to make sure the beef and veggies are tender.
Remove the beef and let it rest before slicing.
Serve the vegetables on the side.
Notes
Choose a corned beef that is uniformly shaped for even cooking.
Cut the vegetables in similar sizes to ensure they cook evenly.
You can add other spices like cloves or bay leaves for added flavor.
