beef
cubed

cup
barley
uncooked
2-3
carrots
sliced

medium onion
chopped

beef broth
Salt and pepper to taste
Optional: spices like thyme and bay leaf
Instructions
Heat a pot and add a little oil.
Brown the beef cubes. Remove and set aside.
In the same pot, cook the onions until soft.
Add carrots and cook for 2 minutes.
Add the beef back in.
Pour in the beef broth.
Add the barley.
Optional: Add spices like thyme and bay leaf.
Let it simmer for 40-50 minutes or until barley is cooked.
Add salt and pepper to taste.
Serve hot.
Notes
Brown the beef well for more flavor.
Use a pressure cooker to speed up cooking.
You can add spices like thyme and bay leaf for extra taste.
If you use low-sodium broth, adjust salt to your liking.
