Ingredients
1
pounds
beef sirloin
sliced into thin strips
8
ounces
mushrooms
sliced
1
medium onion
finely chopped
1
cup
sour cream
12
ounces
egg noodles
2
tablespoons
butter or oil
1
cup
beef broth
1
tablespoon
all-purpose flour
to thicken, if needed
Salt and pepper to taste
Fresh parsley or dill for garnish
Instructions
In a large skillet, heat butter or oil over medium-high heat. Add beef strips and sear until browned. Remove and set aside.
In the same skillet, add onions and mushrooms. Sauté until onions are translucent and mushrooms release their juices.
If the sauce is too thin, sprinkle flour over the veggies and stir to combine.
Return beef to the skillet. Add beef broth, and let it simmer for 5-10 minutes.
While beef is simmering, cook egg noodles according to package instructions.
Reduce skillet heat to low, stir in sour cream until well combined. Heat through but do not boil.
Season with salt and pepper. Garnish with fresh herbs.
Serve the beef stroganoff over the cooked egg noodles.
Notes
For enhanced flavor, sear the beef pieces well. This creates a nice crust and locks in juices.
Slice the beef across the grain. This helps in making the beef more tender when eating.
Always add the sour cream at the very end and do not let it boil. Boiling might cause it to curdle.
Use fresh herbs, like dill or parsley, to add a fresh touch before serving.
If you find your sauce too thick, a splash of beef broth can help adjust the consistency.
