boneless
skinless chicken breasts
1
cup
finely ground almonds
2
eggs
beaten
½
cup
flour
or substitute
Salt and pepper to taste
Instructions
Season chicken breasts with salt and pepper.
Dredge each breast in flour, then dip into beaten eggs.
Coat chicken with the finely ground almonds, pressing the mixture onto the chicken to stick.
Heat oil in a pan over medium heat.
Fry the chicken breasts for about 5-7 minutes on each side or until golden brown and fully cooked.
Remove and let rest on a wire rack for a few minutes before serving.
Notes
For extra crunch, combine almonds with a bit of breadcrumbs or panko.
Flattening the chicken to an even thickness ensures even cooking.
Allow cooked chicken to rest on a wire rack instead of paper towels to keep the bottom crispy.
Toasting the ground almonds briefly before using can enhance the nutty flavor.
Always use medium heat for frying to ensure chicken is cooked through without burning the almond coating.
