Instructions
In a large pot, heat 2 tablespoons of oil over medium heat.
Add the chopped onions and sauté until translucent.
Add the carrots and celery, and sauté for another 5 minutes.
Add the shredded chicken to the pot and stir.
Pour in the broth and bring the mixture to a boil.
Reduce the heat and let the soup simmer for 20-25 minutes.
Season with salt, pepper, and any preferred herbs.
Serve hot and enjoy!
Notes
Use bone broth instead of regular broth for added nutrition and richer flavor.
Feel free to toss in additional veggies like bell peppers or green beans for more nutrition.
For a thicker consistency, you can blend some of the soup and mix it back in.
For added flavor, throw in fresh herbs like parsley or thyme towards the end of cooking.
